head gasket and other questions

Doing a top end rebuild (my first one!) on my 77 500 gtl.

The gasket kit I got from Steve has a head gasket with metal liners where the pistons contact. the gasket shown in the parts book has a paper gasket and another round gasket that goes on top of the cylinder liner. My question is, does this new gasket with the metal liners replace the two gaskets? Or do I need to find another gasket that sits on top of the cylinder liner? The part in question is 0620.88.095.

Also, Mick Walker's book says not to use gasket cement. Should I follow his recommendation?

Other questions -- I'm trying to do a fairly complete rebuild on this baby, the crankcase and tranny seem to work fine. Should I just leave it alone or should I take it apart? So far I had the cylinders reground, valve seals replaced, valve seats reground, and the cylinders and head bead blasted. Also had new piston rings put in.
