Looking for an Itailan single cylinder project bike

I just found your forum and it looks like one of the better forums I have seen.
I was in the San Francisco airport this spring and saw an exhibit of some amazing Italian single cylinder bikes. I have restored a vintage boat and a vintage camper. Now I have my sites set on a vintage Italian motorcycle. I don't really know that much about them specifically so am trying to learn what I can. I raced motorcycles in the 80s so I have a good understanding of bikes and should have no problem with the restoration once I find the right project. Any ideas for project bikes is appreciated. I love the Ducatis I saw but the Benellis and Moto Guzzis were amazing as well.
